Almond Jelly with Longan


Ingredients

A packet of agar-agar powder (plain or coloured)
1.5 L water (or as per instruction)
300 g sugar
colourings (if agar-agar is plain)
500 ml fresh milk, half cream milk (demi-creme) or soya milk
2 pandan leaves, knotted (opt)
A can of longans or fresh longans (if available)
Almond essence (opt)

Method

1. Fill a pot of water, pour in the agar-agar powder and sugar. Stir well, add in the milk and bring to boil. Off fire, pour the mixture into a tray and leave to cool before refrigerating.

2. If using colourings, pour the mixture into a few bowls, and add in the preferred colourings and blend well. Cool before refrigerating.

3. For serving, cubes the set almond jelly into a cocktail bowl. Pour in the longans with syrup and add in the ice cubes.

Beancurd with Chilli Paste


Ingredients

A cake of beancurd, cut into cubes
A handful of dried chillies or fresh chillies, grind
some sugar
1 tsp sesame oil
water

Method

1. Stir fry the beancurd lightly. Set aside.

2. Saute some ginger, add in the grinded chillies and fry alittle.

3. Pour in some water, add in sugar to taste. When the chilli mixture starts to boil alittle, put in the fried beancurd and blend well.

4. Simmer for 2 minutes and serve hot.

Barley Beancurd Skin with Gingko Nuts


Ingredients

A handful of Barley grains
A sheet of beancurd skin
A can of gingko nuts
2 pandan leaves, knotted (opt)
Some sugar to taste
2 L water
1 egg, beaten (opt)

Method

1. Wash barley, and put to cook.

2. When barley grains is ready, pour in the gingko nuts and slightly crushed the beancurd skin to smaller pieces.

3. Add in sugar and bring the dessert to boil. Slowly pour in the beaten egg. Off fire.

4. Serve hot or cold.

Raisins Fried Rice


Ingredients

2 cups of cooked rice
11/2 tsp cooking oil
1 carrot, skin and cubes
A handful of green peas
1 egg beaten
Some raisins

Seasonings
light soya sauce
some sesame oil
a dash of pepper

Methods

1. Saute some ginger in a very hot pan. Put in the carrots and stir fry for 1 min. Add in the beaten eggs, allow to set about 2-3 minutes.

2. Add in the rice, green peas, raisins and seasonings. Toss well and cook for another 5 mins.

3. Off fire, serve hot and garnish with coriander leaves.
