Pumpkin Kaya (Vegan Style)


Ingredients

250 g Pumpkin (weigh after peeling) cut into chunks
250 ml fresh Coconut Milk
2 tbsp sugar to taste

Method


1. Steam the pumpkin for 8 minutes or until soft.

2. Combine pumpkin, coconut milk and sugar in a blender and blend until smooth.
3. Cook in a non-stick pan for 8-10 minutes on medium-high heat. Stirring constantly until the pumpkin kaya become thicks.

4. Discard any oil from pumpkin kaya, leave to cool and store in a jar.
In this recipe the pumpkin is 'yellow-flesh' type.

'Kuey Neng Kuey'

Ingredients


4 medium eggs
180 sugar
230 g Self-raising flour
Or Plain flour with 1 tsp baking powder
75 ml 7-up or Sprite

Method

1. Whisk the eggs and sugar together till fluffy.
2. Fold in the flour and blend well.
3. Add in the 7-up or sprite and mixed well.
4. Pour the mixture into a mold or lined paper cups.
5. Steam over high heat for 30 minutes.
6. Leave to cool and serve.
Note : In this recipe i added pandan paste to do away with the traditional yellow.
