Home-make Kaya (1)


Ingredients

5 eggs
400 g sugar, castor or granulated
500 ml coconut milk

Method

1. In a mixing bowl, lightly beat all the eggs.

2. Add sugar into beaten eggs. Use a hand whisk to stir mixture until all sugar disolves.

3. Add coconut milk into egg mixture. Stir well.

4. Pour kaya into a pot and cook over slow fire.

5. Constant stirring is a must otherwise the jam will burn.

6. The jam will eventually change from cream egg-white to a red-brown color, this is due to the caramel forming from the sugar.

7. Continue with stirring to prevent the jam from burning at the bottom, lowering the flames if needed.

8. When kaya reaches the desired thickness, takes at least 1 hour, remove it from heat. Cool completely before storing it in a clean jar. Keep refrigerated.
